Marigny Brasserie Chef Departs

Daniel Esses, pictured, had his last night as chef at Marigny Brasserie yesterday. He left citing differences with the owners over the direction of the menu. Esses says he's now looking for new opportunities in the city.

The New York native cooked his way through New Orleans kitchens over the course of eight years, and he had a hand in forming the Savvy Gourmet back in the days when it was an itinerant cooking school.

His first executive chef position came in 2005 when he was hired to open the Bank Café, where a 1920s-era bank lobby in the Marigny was turned into a contemporary Creole restaurant. The Bank reopened for a time after Katrina, but by then Esses had decided to hit the road. Back in New York, he worked at Buddakan NYC, an enormous Manhattan restaurant that gets as much props for its creative Chinese cuisine as it does for its over-the-top scale and decor. Esses moved back to New Orleans early in 2008 and soon took over the kitchen at Marigny Brasserie.

I've always found his cooking sharp, soulful and engaging, so I'm eager to see where he turns up next.

Dang...he just got there! Wonder if it was 'creative differences' that caused the chef before him to leave (although quite honestly, his food left a lot to be desired). Does this mean no more middle eastern style fish with the falafel crust over a bed of cous cous? I certainly pray not - that's my favorite entree:(

Sad, sad stuff. That $19 rack of lamb they had was the best value in the city (and possibly the best cook piece of meat I've ever had) and their bbq shrimp appetizer really hit every note. Though I'm sure Dan will land on his feet sometime soon.

We can't lose the MB - that bar is one of my absolute favorite drinking spots. And Sunday brunch with $2 mimosas? forgetaboutit!

Did the MB's owners used to have a place where Sukothai is, down the street? If so, then losing good chefs is a long practice of theirs.

At least the staff always seems to be professional, could the owner learn a thing or two.

What happened to their manager? They managed to keep a manager for quite a while. Where did he go?

Dan is a kickass dude, as well as a kickass chef. Almost every job he leaves is followed by a cooler undertaking. We don't gotta worry for Dan. Just wish him luck and make sure we all know where he works next.

The owners need to take a long look at their past mistakes. They haven't been able to keep a chef for any substantial period of time. They can't really think that it isn't a flaw on their part anymore. Sad.
