), a primarily vegan and vegetarian restaurant, is opening Feb. 5. “I eat meat, but I believe as humans we should be eating a 20 percent meat diet for ethical, sustainable and health reasons,” chef Ben Tabor
says. “That's what I want the philosophy of the place to be.” Tabor, who's worked at restaurants such as Boucherie, Mariza and The Delachaise, also stresses that dishes will be “moderately healthy” and affordable, featuring locally-sourced ingredients when possible. The Sneaky Pickle menu will include housemade beet flatbread with either vegan fillings or pork belly, food bowls, tempeh Reubens, vegan patty melts and fried tofu salad. For the first week or so, Sneaky Pickle will be open 11 a.m. to 7 p.m. Wednesday through Sunday. Tabor plans on expanding the hours as needed.
