Paired with NOLA's mammoth pork chop smothered in caramelized onions and a meaty reduction, this inky plum-colored wine from Italy's Piedmont region is a blast of purple fruit and spice. The distinct smell of tobacco precedes a semi-dry tang that sticks around. Big and bold, leather and flowers, it's sweaty and real like a hot summer ride through a field of rose bushes on the back of a Harley.
