Called "Cava" because the French own the term "champagne," this crisp, sparkling wine from Spain might make you wish for steamy nights in Barcelona, dining on paella at midnight and dancing until dawn. The fragrant wine's mown lawn and mineral qualities turn to soap when sipped with rich foods; it's in the latter part of the festivities -- perhaps with fresh figs and almonds -- that the light and lemony bubbles would best tickle the throat.
