Firestone Vineyard
Santa Inez Valley
Cabernet Sauvignon 1998
$15-$16 Aged steaks, liver pates and Muenster cheese test our predilection for funk: the riper the better. Cabernet Sauvignons like this one teeter similarly on the precipice of rotten smells, like souring cherries and decomposing oak -- take this as a good sign. It doesn't carry over to the flavor, which in this case rattles the tongue with warm explosions of white pepper and plum. Drink this wine alongside burly red meats or a hearty grilled vegetable couscous. Found at Dorignac's, Vieux Carré Wine & Spirits and selected Sav-A-Center locations. -- Roahen
