The non-vintage brut -- the house champagne of August and Peristyle restaurants
-- is a blend of 75 percent Pinot Noir and 25 percent Chardonnay grapes, with
an appealing toasty edge, citrus and appley flavors and a refreshing acidity in
the finish. Enjoy with smoked salmon, duck pate, caviar, crabmeat, shrimp and
