Cooled by Pacific breezes on the west and bordered by the awesome Andes Mountains on the east, Chile offers prime wine growing regions for vinifera grapes in its light, fertile soil. This Bordeaux-style wine, aged a year in new French oak and blended from 65 percent Cabernet Sauvignon, 35 percent Carmenere and 10 percent Cabernet Franc, imparts aromas of ripe berry, cassis, and cedar. On the palate, the wine balances silky tannins with subtle spice, ripe plum and hints of coffee and vanilla. Best when decanted an hour before serving, however, "splash" decanting works almost as well. A great accompaniment to peppery roast beef, strong cheeses and spicy Cajun or Latin dishes. Available at Robert's Fresh Markets on Robert E.
