Owner/winemaker John Seago's determination to produce palatable wines to pair with regional cuisine has been a story of both struggle and success. Zydeco Rosato, a rose-style wine (yes, it's pink!) is made from estate-grown Blanc du Bois, a Euro-North American hybrid, with a little Syrah and a touch of Cabernet for color and flavor. Tropical fruit aromas with hints of spice lead to like flavors with more intensity on the palate. Serve well-chilled. A great food wine, especially with Louisiana cuisine such as boiled crawfish, jambalaya, shrimp Creole, crawfish etouffee and blackened fish.
