Many wine enthusiasts associate Central Coast's Paso Robles with big, red varietals like Syrah and Zinfandel. More of the region's winemakers, however, are blending traditional white Rhone grapes such as Viognier, Roussanne, Grenache Blanc and Marsanne to produce rich and fruity wines that pair well with bold foods. Adelaida combines 58 percent Roussanne and 42 percent Grenache Blanc and ages the blend for a year in four- to six-year-old oak. The wine has a lime and honeyed pear character, lovely minerality and brisk acidity. Drink it with scallops, salmon and pork. Buy it at: Swirl Wines and W.I.N.O.
