This stellar bottling from southern France is by a husband and wife who focus on making wine in the vineyard with little intervention. The dense, inky-colored wine is made from a biodynamic blend of 60 percent Carignan and 20 percent each Syrah and Grenache. Twenty percent of the wine was aged in oak barrels for one year with the remaining portion maturing in stainless steel vats. Expect complex aromas of ripened dark fruits, black pepper and violets followed by a palate of plums, blackberries, black currants, spice notes, earthy and herbal undertones, and silky, firm tannins. Decant an hour before serving. Drink it with fowl, game, lamb and veal, cassoulet and firm cheeses.
