Central Otago, the world's southernmost wine region, produces some of the most elegant Pinot Noirs to be found anywhere, which are reputed to rival wines from Burgundy. A beautiful expression of the varietal and this region, Peregrine was aged 10 months in 35 percent new French oak barrels followed by light filtration before bottling. In the glass, the wine offers concentrated aromas of ripe plum, strawberry, mocha and notes of sweet spice. On the palate, taste complex flavors of dark cherry, raspberry, clove and a slight earthiness. Silky tannins balance with crisp acidity on the lengthy finish. Drink it with grilled tuna or salmon, duck confit, mushrooms, roast chicken, pork, veal or lamb. Buy it at: Martin Wine Cellars in Metairie and Mandeville. — BRENDA MAITLAND
