A blend of 40 percent Syrah, 40 percent Mourvedre and 20 percent Counoise was fermented in temperature-controlled stainless steel vats. On the palate, taste watermelon rind, cherry, raspberry, hints of herbs, citrus and a subtle minerality. Serve it well chilled with a variety of light to heavier foods including smoked or cured salmon, fish, shrimp, fowl, ham curries and chevre and roasted beet salad.
