Castello di Gabbiano, built in the 12th century in the center of what is now the Chianti Classico region, produces this Super Tuscan. The 252-acre estate features vineyards and olive groves. Solatio means "sunny," and that says a lot about the wine's bright flavors. Fruit for this blend of 50 percent syrah, 45 percent cabernet sauvignon and 5 percent sangiovese was harvested at full, uniform ripeness. In the cellar, grapes were fermented in separate temperature-controlled tanks and for several weeks the juice was exposed to skin contact to achieve maximum color and flavor extraction, after which the wine rested for eight months. In the glass, it offers aromas of blackberry, black cherry and spicy notes. On the palate, one tastes red berries, a hint of licorice, herbal notes and well integrated tannins on the soft, acid-balanced finish. Decant 30 minutes before serving.
