2012 Simonnet-Febvre Saint-Bris Sauvignon Blanc

The Saint-Bris controlled destination of origin is the only Burgundian appellation that permits Sauvignon grapes (Blanc or Gris) in its wines. Although both Chardonnay and Pinot Noir production are allowed in that appellation, the Saint-Bris designation is only applicable to the white Sauvignon wine produced. The wine was vinified in stainless steel tanks followed by full malolactic fermentation. The wine matured six to eight months in stainless steel before bottling, where it aged one to three years. The wine subtly captures the vibrant, fresh and elegant style of the classic Loire valley Sauvignon Blancs. In the glass, the wine presents lively aromas of lemon zest, a touch of grassiness and hints of tropical fruit. On the palate it reveals tart lime, green apple, a stony minerality and brisk acidity on the mouth-watering finish. Serve chilled. Drink now and over the next two to four years. Enjoy with fish and shellfish, cream soups and bisques, salads, Brussels sprouts with bacon, roast chicken and soft cheeses such as Brie and Camembert.
