"Decades ago cooking in restaurants was considered low, menial labor, and kitchens were often staffed with African-Americans. But now that the restaurant industry feels somewhat like a wing of the entertainment industry — blacks are underrepresented as chefs and cooks."

— From a recent Chicago Tribune story about the scarcity of black chefs in America. The paper reported that about 60 percent of chefs and head cooks in the U.S. are white, 9 percent are black and more than 18 percent are Latino.
