"When a new restaurant opens in New Orleans, for the first three to six months, you can't get a table, and then everybody goes back to their five favorite places. It takes about five years for a restaurant to reach that favorite status."

— An unnamed New Orleans restaurateur quoted in USA Today in an April 21 story about the "10 Best Foodie Spots in New Orleans." Writer Millie Ball included Restaurant R'evolution, Peche Seafood Grill (pictured), Root, Coquette, Galatoire's, Commander's Palace, Domenica, Upperline, Dooky Chase and Parkway Bakery.
