Sneaky Pickle (4017 St. Claude Ave., 504-463-6911), a primarily vegan and vegetarian restaurant, is scheduled to open Feb. 5. "I eat meat, but I believe as humans we should be eating a 20 percent meat diet for ethical, sustainable and health reasons," chef Ben Tabor says. "That's what I want the philosophy of the place to be." Tabor says dishes will be "moderately healthy" and feature locally sourced ingredients when possible. The menu will include house-made beet flatbread with either vegan fillings or pork belly, tempeh Reubens, vegan patty melts and fried tofu salad.
Initially, Sneaky Pickle will open 11 a.m. to 7 p.m. Wednesday through Sunday, and Tabor expects to extend hours in the future.
