Wine of the week: 2015 Domaine des Masques Essentielle Chardonnay

This 100 percent chardonnay wine is produced in southern France's Bouches–du-Rhone IGP (Indication Geographique Protegee), on the outlying edges of Provence. The estate sits on a plateau at more than 1,800 feet above sea level, and free-draining soil means more flavorful wines. After nighttime harvest, the grapes were pressed and the juice placed in stainless steel tanks and vinified for two days, then fermented eight to 10 days. On the palate, taste citrus, apple and pear with mineral notes. Drink it with sushi, grilled fish, roast fowl, seafood terrines, shellfish and soft cheeses such as brie and Camembert.
