Although Aquila's boutique wines are produced on the faraway tip of southwestern Australia, you'll recognize the prominent characteristics of their award-winning Cabernet Sauvignon. There's the cherry-vanilla nose, the taste of blackcurrant and mint, and the long-lasting tannic sting. Then there's the kicker: an aftermath of dark, tart plum. This full-bodied, lively Cabernet Sauvignon undoubtedly will come together nicely with age; for now, pair it with rustic dinners of shepherd's pie, duck sausage pizza or braised greens.
