Wine of the Week 

Spring Mountain, an American Viticultural Area (AVA) that many critics and wine lovers believe produces the most consistently outstanding wines of any AVA, is home to the eponymous winery that crafts this estate-grown, powerful, well-structured wine. A blend of 90 percent Cabernet Sauvignon, 8 percent Cabernet Franc and 3 percent Petit Verdot, the wine was aged 22 months in French oak. Fragrant with cassis, black tea, cocoa, vanilla, earth and spice, this classic, seductive wine offers a pure expression of concentrated mountain fruit on the palate with layers of cherry, plum and ripe berry beautifully balanced with well-integrated, silky tannins and good acidity. Decant it to release the magnificent aromas and flavors. It's a good match with rare beef and grilled or roasted meats. Where to buy it: Partysist, Dorignac's and Langenstein's in Metairie (The excellent 2003 vintage may be available in some locations).
