Wine of the Week 

The trend-bending Txakoli (pronounced cha-kó-lee) may be Spain's latest claim to both the hottest and coolest wine sensation around. From north-central Spain's Basque region, this Txakoli is made from sustainably farmed, 100 percent Hondaribbi Beltza grapes and fermented in stainless steel. Refreshingly light, with a slight effervescence and low alcohol, the wine is especially well suited for sipping during sweltering summers. Floral notes, subtle red berry fruit aromas and a pleasing mineralilty lead to a spritzy, delicious palate pleaser with lively acidity and subdued strawberry and raspberry flavors followed by a long, juicy finish. Serve well chilled. It's a versatile, food friendly wine that matches as well with seafood, sausage, pasta, salads and spicy Asian or Cajun cuisine.
