Wine of the Week 

The Sastres have farmed their prime vineyards — some of the oldest in the region — in the heart of Ribera del Duero for several generations. The family balances traditional agricultural measures with modern equipment and techniques. Completely organic and bio-dynamically farmed, Tempranillo grapes (100 percent) are aged seven months in 2-year-old American oak. The wine displays black cherry, cassis and earth aromas with tobacco and mocha notes. On the palate, a core of rich, dark berry and plum flavors mingle with coffee, spice and oak accents in this full-bodied powerhouse backed by good acidity and well-integrated tannins. Decant if for best results if you drink it now, but it will hold for the next five years. It's a good match with grilled and roasted meats. Where to buy it: Swirl, Rouses in Uptown, W.I.N.O., Bacchanal and Dorignac's. Where to drink it: W.I.N.O. and Café Arabesque. (Listings current at press time.)
