Cristina Quackenbush to helm new Bywater restaurant

Chef Cristina Quackenbush will be running the kitchen at a new Bywater restaurant by early summer, but don’t expect Milkfish 2.0.

The new restaurant will take over the old Maurepas Foods space at 3200 Burgundy St. It will have “a hint of Filipino” food on the menu, but the emphasis will be on local first, says Creole Cuisine Restaurant Concepts’ Marviani Ammari.

Chef Michael Doyle closed Maurepas Foods, a popular farm-to-table concept, last year and the building on the corner of Burgundy and Louisa streets sat vacant for awhile before being claimed by the bourgeoning restaurant group. The group also owns Kingfish, Broussard’s, Cafe Maspero and a host of daiquiri shops and is slated to open several restaurants in the coming year.

Quackenbush ran a popular pop-up of her Filipino concept Milkfish for years before opening a brick-and-mortar of the same name near the corner of North Carrollton Avenue and Canal Street in Mid-City. That restaurant shuttered last spring and since then, the chef has been hosting occasional pop-ups across the city.

Ammari says he’s admired Quackenbush’s cooking for years.

“I went to (Milkfish) regulararly and loved what she was doing,” he says. For the past several months, the chef has been cooking at a number of the group’s restaurants and eventually was tapped to helm the new Bywater spot.

Though the menu is still being worked out, Ammari says diners can expect something “cool, edgy, local and very approachable.”

The new restaurant, which hasn’t been named yet, will open in mid-June and serve lunch, dinner and brunch on weekends.
