Adam Biderman unveils revamped fall dining menu for Cure

Burger wizard Adam Biderman has taken his talents on the road once again, crafting the new fall 2014 food menu for Cure. Biderman, who also worked to develop the dining options at Cane and Table, has been tinkering with Cure's menu since spring.

"I'm pretty excited about this new menu, and it's continually being tweaked which is even more exciting," said Biderman. "The vision for the new menu involves matching the level of technique and precision at Cure with the level in which the drinks are made. Both aspects of Cure (food program and cocktail program) should be treated with the same attention to detail and care in regards to the execution. I've designed the menu with the idea of drinking cocktails in mind, not necessarily paired, but just as satisfying and delicious."

The tentative menu (which will have a few additional options and retain some old favorites) is below, and will be officially rolled out in the coming weeks:

Fall 2014 Menu

Three or five cheese plate
Chef's daily selection, accouterments

Bowl of puffed pork skins
Cure seasoning

Steak tartare
Egg dressing, shallots, mashed capers, parsley

Sweet potato gnocchi
Brown butter, lemon, sunchokes

Marinated seasonal vegetable salad
Tarragon vinaigrette, crispy shallots

Braised chicken thigh and polenta
Celery root and parsnip gravy, gremolata

Duck liver pate
Granny Smith mostarda, butter toasted panko, sprout salad

Eggs mayonnaise
Tarragon and chive

Country ham plate
Bentons aged and smoked, biscuits, whipped Steen's Cane Syrup and Creole mustard

The CureWich
Fried eggs, cheddar, braised bacon, Weiss Guys roll
