Creole cuisine was influenced by African, French, and Native American cooking, also Creole is the high end cultured environment of the city of New Orleans. Cajuns did not come to Louisiana to later and they are the rural country flavor of the farm. The Vietnamese did not influence Creole cooking or culture. The French founded New Orleans, and ruled it with style! Due to the efforts of the French, Free people of color, Native Americans, Spanish, and slaves our city became glorious. All other groups are a foot note. Joann needs to check her facts. But what would a French Quarter barmaid from the 1960s know?
