The 2005 vintage from Gimblett Gravels is a Right Bank Bordeaux-style, single-vineyard blend of 79 percent Merlot and 21 percent Cabernet Sauvignon. Aged 19 months in new French oak, the wine's aromatics offer ripe dark fruit, red berries, deep florals, cedar and appealing minerality. On the palate, the wine reveals cassis and plum flavors, spicy notes, firm tannins and good acidity. Decant an hour or more before serving. It will improve with cellaring over the next five to 10 years. Drink it with broiled or grilled meats and aged cheeses. Buy it at: W.I.N.O., Swirl Wines and Dorignac's. Drink it at: Marigny Brasserie, NOLA, MiLa, W.I.N.O. and Allegro Bistro. — Brenda Maitland
