5 Tequila Tall Tales

1. Tequila is made from cactus.
There are no Mexican spirits made from cactus. Tequila is made by distilling the sap from the heart of the agave plant. Out of 138 known varieties of agave plants, only the blue agave plant can be used for the production of tequila. Several species are allowed for the production of mezcal, on the other hand.

2. You can make tequila anywhere.
Though agave plants grow in several regions, tequila can only legally be referred to as "tequila" if it is produced in one of five Mexican states: Jalisco, Tamaulipas, Michoacán, Nayarit, and Guanajuato.

3. Tequila is best taken as a shot.
Tequila should be sipped from a wine glass, champagne flute, or any glass that allows enough room between the liquid and your face to truly enjoy the aromas of the spirit.

4. There's a worm at the bottom of tequila bottles.
True tequila should never contain a worm in the bottle. Some grades of mezcal do contain a worm (actually a larva) which has feasted on the agave plant. When they die, they taste like agave and can enhance the flavor of the mezcal.

5. Colored tequilas are raw. The best stuff is clear because it's pure.
Tequila is made through a double distillation process, which leaves the tequila colorless. This can either be bottled immediately and sold as Silver tequila, or aged in redwood or oak barrels, adding color, flavor, and smoothness for Gold and Premium-grade tequilas. However, many American brands merely add caramel coloring to the spirit and sell it as Gold tequila.
