With spring around the corner, Louisiana's farmers uproot late-winter harvests, which make perfect Southern sides for Mardi Gras feasts. Turnip, mustard and collard greens are best when braised with ham hocks or bacon in potlikker, the leftover broth from boiled greens. The aromatic broth is rich with nutrients drained from the leafy greens. Even famed Louisiana politician Huey P. Long once presented the merits of potlikker in an infamous Senate filibuster. Find these soul food staples at the Gretna Farmers Market, Mid-City Green Market and the Crescent City Farmers Market, where king cake bakers from across Louisiana offer a sample buffet on Saturday.

The Gretna Farmers Market is at Huey P. Long Avenue between Third and Fourth streets in Gretna from 8:30 a.m. to 12:30 p.m. Saturday. The Mid-City Green Market is at 3700 Orleans Ave. from 3 p.m. to 7 p.m. Thursday. The Crescent City Farmers Market is at Uptown Square from 9 a.m. to 1 p.m. Tuesday and Magazine and Girod streets from 8 a.m. to 11 a.m. Saturday.
