South Australia's Barossa Valley winemakers fashioned The Holy Trinity after the classic Rhone-style blend, combining 39 percent Grenache, 35 percent Shiraz and 26 percent Mouvedre. In the glass, anticipate an aromatic bouquet of lavender and rose petals with dried herbs and flowers, spice notes and traces of white pepper. On the palate, the wine presents a complex blend of savory and sweet with plum, spice, deep red berry flavors and a touch of pepper. Well balanced with soft, rounded tannins. Drinks well now but will improve with bottle aging over the next 10 years or so. Very good paired with duck, pepper steak, venison and roasted meats. Where to buy it: Dorignac's.
